Friday Favs- Thanksgiving 2016

We hosted Thanksgiving at our house. It was not as hectic for us because we enlisted lots of help from our families. Thanks to my mom for making tons of sides and desserts, my dad for making the dressing (or stuffing as some of you refer to it as), my in laws for making the turkey and my little brother made the gravy. All we made was cranberry sauce and a couple appetizers which was easy peasy. I must say that Thanksgiving is my favorite holiday. I love how it requires no gifts. It’s all about spending time with family and enjoying yummy food, watching the parade and some Charlie Brown too. I’m especially thankful this year that our little guy is feeling better. He was sick for a couple days with a stomach bug but is all better now. 

Popsicles make everything better.

Friday Favs- NYC trip 

My Friday favs this week are all about my trip to New York. I was there from Friday to Tuesday of this week. It was a great trip.  I got to spend time with my mom, aunt, and cousins in the city till Sunday. Then I got to spend time with my  college/sorority/best pal, Rachel outside of the city. I got a few days of the hustle and bustle of the city and a few days of great girl talk and  peaceful strolls around the suburbs. Here are some of my favs from this week. 

1.  Sadelle’s Bagels– My cousin, Kim got the recommendation for a delicious bagel place. I could not get over how great the bagel tasted and the smoked salmon was the best I have ever had.  I would love to be able to have another one of these right about now.  We ended up getting them to go because the Saturday brunch wait was over an hour. 

2.  Kinky Boots– I saw my first Broadway show this trip. I loved everything about it: the story, the music, the costumes, the boots 😊. We had a great time taking a photo outside the theater after the show too.  I would definitely recommend it to anyone next time you are in New York. 

3. Today Show- I was prepped by my family on Friday night before we went to sleep that we would be getting up early to go to the Today Show on Saturday morning. I really wasn’t sure what to expect when we got down there. We were told it is much easier to get a spot outside on the weekend. My mom and my cousin each made signs. We stood out there for two hours and had a great time watching the anchors compete on a baby challenge. We weren’t sure if the camera man would film us but I did here from a couple of you that you saw us on tv. We had a great time and it will definitely be something we bring up when we get together… even this Minnesotan could not get over how cool it felt standing outside that day. 😉

4.  Erica and Rachel time! When I planned this trip with my family I called Rachel right away and said I am coming to NYC and I want to hang out… Last time we were in New York we got to spend time with her and her husband for an afternoon which was wonderful. This trip I wanted to see if we could actually get to hang out for a couple days. We both laughed and agreed that our conversations have definitely shifted as we have gotten older and have families of our own. We managed to take a selfie while walking around outside on Monday. 

These are just a couple of the things we did while in NYC. I mentioned on Facebook last week that R had started to move more… Well since I have been back he is walking on his own… He is  I managed to get this picture on Thursday night… it’s incredible how much stronger he has gotten and how he is starting to move around on his own more. 

We  are supposed to get some snow this weekend. Pile on the blankets, enjoy a cup of cocoa and have a great weekend 🙂


Friday Favs- what a week

Wow! What a week this has been…. I am shocked at all that has happened this week and excited for all the fun this weekend. This past week I saw Mayim Bialik speak and I saw Ina Garten (Barefoot Contessa) speak too. I subbed one afternoon and got over being sick after subbing for 1 week…. My immune system is a mess right now…. I used to be much stronger! I am typing this right now in the Minneapolis airport… it’s 5am and I am waiting to catch a flight for NYC. I’m meeting my mom, aunt, and cousins for a girls trip and to celebrate some very special birthdays that are coming up. Also I am extending my trip and getting to spend time with  one of my best pals, Rachel ( sorority sister, roomie, college bud). I am so excited because I am staying with her for a couple days and will get to spend much more time with her then we have gotten to in the past. I am traveling without R which is always bittersweet… I miss him tons already but know this is going to be a great trip and will be just what I need to recharge.

Friday Favs- crock pot dinner

This week was my first week back working with kids since having R. I decided to sub at his school and I am really enjoying it. I worked  1 full day and 2 half days. I didn’t realize how much I missed it but I love being back in the classroom with little kids. Justin and I were prepared for this week and made sure meals could work with our updated schedule. He was home on Tuesday so I left him directions to make dinner. We were big fans of this and I imagine it will be made again very soon. I took all of your advice from Facebook on Quinoa and had Justin attempt it on Tuesday. We bought quinoa from Trader Joe’s and used chicken broth instead of water. Then I seasoned it with some salt, chopped fresh cilantro, and fresh lime juice. We made Kat’s black beans which I love and could definitely eat once a week. We omitted the red pepper flakes so R could eat it too. Justin made Weelicious’s crockpot pulled chicken while I was at work. He turned the slow cooker on high and it took an hour and a half.  The way I plated this was to put the quinoa down first. Then I layered the black beans on top of it and placed the chicken on top of that. We added cotija cheese, sour cream, guacamole, and salsa too. The picture is not great but I can promise you it was very tasty. 

One more picture from this week… I ended up subbing in a class that combines with R’s class for Hebrew on Wednesday. One of the teachers snapped this one of us. 

What are some of your favorite crock pot meals? I’d love some new recipes. I think we are big fans now.
