Homemade Mackles’mores

image

S’mores are one of my favorite desserts. I have made s’more bars, s’more dip, s’more brownies and now I have made s’more cookies. When we went to Seattle a couple weeks ago my brother told me we had to go to a bakery there called Hello Robin. They make a chocolate chip cookie with marshmallows in it that sits on top a graham cracker and has a piece of Theo’s chocolate on top. All I can say is it was AMAZING! I left the bakery wanting to recreate it. My cousin, Paige and I made them for lunch on Rosh Hashanah. I think they were well received because when we were cleaning up after the meal we noticed that none were left. After we got back to Minnesota I learned that Theo Chocolate was releasing a cookbook and the Mackles’more cookie recipe was in it. I snagged a copy on Amazon. I haven’t had a chance to make Hello Robin’s recipe but I am eager to make it along with many other recipes in the cookbook.

BTW… Theo chocolate can be found at Whole Foods.

Seattle Snapshots

Where have I been? I just realized I haven’t blogged since September 4. We just got back from Seattle and trying to get the little guy back on schedule has not been very easy…. I’m not going to write a lengthy entry today… Instead I will just give you some snapshots from our fantastic trip to Seattle. Our little  guy got to meet his great grandmother, uncle, great aunt, great uncle, cousins and lots of friends. It was our first plane ride with him and he did great. We can’t wait to go back!

Baby… I’m worth it…

This post is going to be quick…my little one is asleep in the mamaroo and had a bottle 2 1/2 hours ago so judging by his predictability he will be waking and demanding a bottle in the next half hour…so I don’t have much time to blog but anyways… I have a question for you guys… Is this item worth it? I just want to state that I do not own it/nor would I buy it because my husband would kill me because it would be another kitchen appliance  crammed onto our lovely counters but it’s enticing I must say. Now why would I find it interesting? Well it’s not the price… I did some quick research online and found the Baby Brezza Formula Pro One Step Food Maker ranges in price from $140.07-$159.99. I think it might actually be helpful. If you are like me and are primarily bottle feeding it could save time. I mean I love making a bottle and measuring out 2 1/2 scoops of formula powder and trying to line up the 5 ounces of water from the fridge while my 11 week old screams bloody murder at 4 am…It’s crazy I mean friends who have older kids have let us in on the secret of making bottles ahead of time and storing in the fridge but maybe this thing could help someone like my husband, and I… Those first time parents who believe that the Fisher Price Rock N Play really could be the best thing ever invented and that sometimes we could use a little help to give us a chance to take a breath… But anyways I’m rambling so you tell me… What do you think? Is it worth it?

In a nut shell…

My little man

I have decided to get back to blogging… I have debated this for a couple of weeks.  Could I do a blog again? What would I blog about? Would people want to read it? I decided with an 11 week old baby boy I would like to put helpful items and info that I have learned through pregnancy and motherhood. Also I  want to challenge myself to get back to cooking new recipes and exploring the Twin Cities. So…in a nut shell this will be what the blog is about.

How often will I post? That’s something I am not so sure of but I am thinking 3-4 times a week.

Will they be lengthy? Gosh no, they might even have some typos in them because even now I am typing with the iPad raised above my little one who is napping on me.

Lots of love,

Erica
